Flavor Wheel and Sensory Lexicon


Come to explore the Flavor Wheel in the immersive two-day course.

Over the course of two days we will explore the Flavor Wheel in depth using the World Coffee Research (WCR) Sensory Lexicon as reference. We will spend time experiencing the various intensities and learning the professional use of Intensity Scaling. How intense is a 3 on the scale? How intense is a 10? Get to know the difference so you can create your own intensity scales.

We will also explore as many Attributes from the Lexicon as possible. Starting with the inner-wheel or least complex; fruity, floral, nutty/cocoa, etc.
What does Raspberry taste like? We will discuss the definition and intensity while we experience the reference. For Raspberry the reference is Jello.


Finally, we will compare these references from the Lexicon to coffees from all over the world to see how the references can be used as a tool and better define what attributes are in coffees.
