Green Coffee Foundation Level

No coffee experience or pre-requisite needed.

This 1-day course can be taken in person or online. Online enrollment will close 1 week before start date to ensure time for delivery of supplies.

We will cover basics of the following topics;

  1. Coffee Species / Coffee Family Tree

  2. Coffee Grading and Defects

  3. Tasting Arabica and Robusta

  4. The economics of Coffee

  5. Smallholder vs. Farm

  6. Coffee processing and harvesting

  7. Sizing

  8. Transportation and storage

  9. Certifications

  10. Decaffeination

  11. Equipment & Maintenance

  12. Traceability

Course Fees: $300 includes online or in person instruction, coffee supplies, digital or printed course materials, and if applicable - shipping within the USA. SCA Certificate will be available upon completion of practical exercises and a written exam for a $100 certification fee..

Green Coffee Intermediate Level

No prerequisite, but we suggest having a basic working knowledge of coffee. Introduction to Coffee, Green Coffee Foundation, and Sensory Skills Foundation are all suggested.

This course is recommended for roasters, baristas, and anyone interested in understanding the key concepts of coffee before the roasting process. No prerequisite, but we suggest having a basic working knowledge of coffee. Introduction to Coffee, Green Coffee Foundation, and Sensory Skills Foundation are all suggested. Contact us to schedule any or all courses.

This is a distance learning course. To participate you will need access to good working internet and a laptop or tablet. Coffee brewing equipment is also necessary to participate in the tasting exercises. Use your own or we can provide equipment options at a small additional cost.

 In this course we will discuss:

  1. Botany - species, variety, cultivar differentiation and global spread

  2. World Production - evolution of production and consumption, areas of growth

  3. Coffee Farming - plant management, location, seasonality, shade, terroir

  4. Processing Methodology - weights, cherry anatomy, picking and processing, drying, defects from drying, resting, OTA, and grading

  5. Markets and Contracts - physical vs futures, arbitrage, spot pricing, differentials, contract formulations, incoterms

  6. Storage and Transport - weight, technology, documentation, storage

  7. Certification - market differentiation and third-party accreditation

  8. Decaffienation - workflow and methods, legal criteria

  9. Analysis Venues & Operations - overview
