Barista Skills Foundation Level
No coffee experience or pre-requisite needed.
This online course is excellent for anyone looking to create an espresso and cappuccino while learning more about the role of a barista.
This is an in-person or distance learning cours. If remote, to participate you will need access to good working internet and a laptop or tablet. Espresso equipment is not necessary but will greatly enhance the experience. We can provide equipment for an additional fee. Email us for more information.
In this course we will discuss:
Coffee Beans - species, freshness, and roast
Workspace Management - equipment introduction and general use, cleanliness
Espresso Process - how to make the beverage
Extraction and Brewing - defining espresso
Sensory - experiencing and describing the beverage
Milk - freshness, foaming, and temperature
Espresso Menu - components of popular drinks
Cleaning and Safety - hygiene and cleaning practices
Water Quality - impact on brewing and machine function
Customer Service - and café management
Course Fees: $300 includes online or in person instruction, coffee supplies, digital or printed course materials, and shipping within the USA. SCA Certificate available for an additional $50 certificate fee. No practical test is given but an online written exam will be delivered via email with 21 days to complete and 2 attempts available, passing score is 60%

Barista Skills Intermediate Level
No pre-requisite needed but at least 6 months of coffee experience including tasting or Foundation
The Barista Skills Intermediate course builds on the concepts and skills introduced in the Foundation course. It is ideal for someone who has some barista skills experience and wants to explore how to improve coffee quality and prepare for more complex job functions found in the barista profession.
In this course we will discuss:
Coffee Beans – blends, single origin, species, variety, geography, processing, degas, age
Workspace Management – efficiency, double barring
Grind, Dose, Tamp – equipment, heat transfer, technique
Extraction and Brewing - variables and control, input and output, flavor related to these from the flavor wheel
Milk Techniques – steaming and the composition of diary and non-dairy milks, defects, SCA best practices, latte art, pitcher sharing and pouring
Barista Menu – preparation of common beverages, multi-drink orders
Hygiene, Health and Safety - safe organization and processes, identifying and minimizing risks
Customer Services – service recovery and compliant management, personal presentation, communication, taking and preparing orders, single and multi-boiler machines, and maintenance
Café Management – Cost management
A written exam tests Intermediate course knowledge while a practical exam assesses the learner’s ability in terms of grinder calibration, espresso extraction analysis, latte art skills and drinks construction.
Course Fees: $600 includes instruction, roasted and unroasted coffee supplies, and digital or printed course materials. SCA Certificate available for an additional $100 certificate fee.
Barista Skills Professional Level
Sensory Intermediate pre-requisite and 3 months of time between Intermediate and Professional is suggested.
The 3-day Barista Skills Professional course builds on the concepts and skills introduced in the Intermediate course. It is ideal for someone who has been working as a Lead Barista, Café Manager, Owner and for individuals who have completed Barista Intermediate and have a minimum of 3 months practicing content from that course. The Intermediate course is required.
In this professional course we will explore:
Differences in green and roasted coffees that may be related to density, altitude grown, varieties, processes, decaffienation, and storage.
Drink production
Improvements in workflow.
Extraction will be analyzed, and adjustments made to extract to different levels.
Discuss milk in depth including processing and composition and its ability to foam.
Define and test water quality and adjust water to meet standard and use sensory to identify subtle differences in coffees, describe espresso brews, extract different coffees to find optimum taste and create brew recipes for espresso.
Attendees will improve on latte art techniques to pour at least two designs consistently and split a pitcher of steamed milk between two lattes to pour the same design in two cups.
A written exam tests Professional course knowledge while a practical exam assesses the learner’s ability in terms of grinder calibration, espresso extraction analysis, recipe creation, and latte art for multiple drinks.
