    Thomas has built his life around working with partners to create and strengthen Quality Assurance and Food Safety systems, Training and Sensory Programs. He loves using his skills to educate and mentor coffee professionals and includes SCA and CQI certification programs along the way

    CAFE, SPIRITS, STAFF

    Mo uses her experience as Director of Food and Beverage at Slipstream and a US Coffee Champs competitor to set high quality standards and train cafe staff to attain those standards. creating staff training, Mo loves eliminating waste by identifying it and then transmuting it to gold.

OUR WORK

  • Buunni TEAM TRAINING - Coffee and Quality Assurance

    Working with the Founders at Buunni to design a 1-year training program for staff to create and support growth plans using the Specialty Coffee Association’s Coffee Skills Program certifications as the foundation.

  • Mananalu

    Create and Direct Food Safety, Quality Assurance, and R & D systems to meet and exceed Global Food Safety Initiative and Customer requirements including Safeway, Sprouts, Amazon/Whole Foods, Wegmans, and more.

    Design and Implement Supplier Approval program including audits of raw material suppliers and co-manufacturers.

  • Workshops - National and International Coffee Events

    Lead workshops and cupping events at SCA Expo, World of Coffee, Thailand Coffee Fest, Barista Camp, Roasters Retreat, Access, SE Roasters Consortium and more.

    Workshops include Organic Acids and the Chemistry of Coffee, SCA Flavor Wheel and Sensory Lexicon, The Science Behind the Flavor Wheel, Water for Coffee, Espresso Evaluation, SCA Professional Sensory, Intensity Scaling, and Taste Testing for Production.
